This area runs through the rolling hills of the Enza Valley and is rich in castles, fortresses, towers and churches. Here was the dominion of Matilde - the great Countess, a major figure in medieval history - centred on the castle of Canossa. But the visitor's itinerary can continue through the plains and what were once small city states, whose rulers left their marks with the castles, villas and other buildings that dot the landscape. Cooking from this zone is maily farmhouse in origin, although traces of the renaissance linger on. |
