Bologna is characterised by vast public squares, imposing palaces, museums, the red bricks of the buildings, the high towers and the 40 kilometres of porticoes which give the city a characteristic and unmistakable aspect. The Italian Academy of Cuisine wich is based in Bologna has officialy decreed the following: the width of genuine tagliatelle must be one 1,270th of the eight of the Asinelli Tower, namely exactly 8 millimetres.
